Best high heat frypan?

I'm a full heat kinda cook, especially for things like steak.

Can anyone recommend what sort/brand?

No effing way to a nonstick pan if you want it hot.  Nonstick +heat =wrongsauce.

For a pan you can heat with no concerns about teflon, a solid iron frying pan from a camping shop is excellent.  You do need to season them but once they are seasoned you can heat them and they are nonstick and you get an excellent mailliard reaction.

Can you use them on high heat, I have a scanpan frying pan and the instructions are definitely not to use on high heat.

Teflon cannot be used on high heat.

I also love my tefal and scan pan but would definitely noy use them for high heat cooking.  My dad is a steak lover and he uses a cast iron pan.  I use y scan pan, I brown first over the stove and then finish in the oven. Great results.

No, no, no and NO to non stick and high heat!

As PP said nip down to a camping store and get a cast iron pan (we have a grill type one so we can have stripes on our steak) and season it well.

Cast iron or carbon steel. You can get cheap or expensive versions of both. The main difference is that the expensive ones are made using a one use cast so there are no seam lines and it should be smoother. Not really a big deal for the often 10x price difference.

Cast iron, there were some sets of preseasoned ones at aldi- with a camp oven etc. I use cast iron BBQ plates for steak and indoors a cast iron skillet or griddle pan. Any other high heat cooking is done in a wok. Otherwise I have stainless steel sauté pans for shallow frying or making spaghetti Bol etc.

We bought Allclad pans last year and I LOVE them.
They aren't non-stick but they are so easy to clean and great to use on low or high heat.
