Stand out Christmas Dinners

Thought I'd start a thread where we can post what was some of the more amazing things you (or others) cooked over Christmas.

I'll start with what we had for Christmas Eve:

Roast duck, basted with cranberry and aged balsamic vinegar, served with duck fat potatoes and a green salad with blue cheese and walnuts.

The stand out for me was the Nigella chocolate pavlova, served with cream and berries.  So crisp on the outside and chocolatey and gooey on the inside!!

Mine is a roasted pumpkin salad that has pine nuts and a maple syrup and mustard dressing.  Scrummo.

That sounds so good, I think I might have to find an excuse to make it!

My brother did a beautiful butterflied leg of lamb on the BBQ which was marinated in yoghurt, cumin and other lovely spices and SIL served it with a roasted pumpkin salad that sounds suspiciously like Monket's above.  Divine  biggrin.gif

I think the duck turned out pretty well.
Brined it in OJ, ginger, garlic & herbs & spices for a day before, washed it off and dried it in the fridge overnight.
Mixed together the same herbs & spices & ginger & garlic into a paste and rubbed it over the insides.
Roasted on the Weber until done.
Was lovely and juicy and had a slight Asian-inspired taste.

Are standout lunches allowed?  Here's mine:

Marmalade glazed baked ham, bean, sugar pea & cranberry warm salad, homemade bagels, iced mint water and a glass of champers, perfect for a hot day!

Please do! It sounds delicious!

We haven't really had a family Christmas, but I made sweet potato and green bean salad with roasted garlic, balsamic vinegar and sweet chilli dressing for work and everyone LOVED it and wanted the recipe original.gif I love it because you can have it hot or cold! I often oven bake some haloumi when I roast the veggies and throw that in the salad too!

Macadamia pavlova from the December better homes and gardens (I also posted the recipe in one of my Christmas recipe questions last week in the recipe forum)

I made the Nigella chocolate and Raspberry one last year (and it was devine) but I have to say that I liked the macadamia one a little bit more (so did DH)
I topped mine with white chocolate macadamias, dark chocolate macadamias, normal roasted macadamias and chocolate almonds.
