Replacing bacon
Ingredient substitute ideas?

I make a delicious stuffed butternut pumpkin dish with cheese, rosemary and bacon. It's seriously good.

A friend is adapting it for a vegan dinner party, and needs to use something instead of bacon. The dish also needs to be gluten free so most of the fake bacon substitutes are out because of gluten.

She's thinking capers? Any other ideas?

You're looking for umami then.  What are they replacing the cheese with?

Mushrooms?  Perhaps some of the stronger flavoured more exotic ones?

Gluten free vegan 'cheese.'

Long term vegan family members so she's pretty savvy at what's good and what's not original.gif

Yeah, with the rosemary I would go for mushrooms.

Kosher pareve (non-dairy) bacon salt It does not contain bacon, it is tastes-like-bacon.

Some of their lines are "kosher, dairy" which is bad for vegans (okay for vegetarians) but some like the Peppered  or Applewood are listed as "kosher pareve" and that means there's no dairy in them.

That's the site with the nutritional info and stuff and then you can order them off Ebay.

I would put it on mushrooms or something.

I've had that problem and I was directed by the vegos concerned to faux bacon (can't remember what it's called) available at the supermarket(Coles) deli counter.

Yes I'd go the mushrooms as well.

Bacon salt won't be a good replacement for bacon or cheese as it is a condiment, not an ingredient.

Balzac yeah I'd go the mushrooms too, I meant with it, not instead, like oh yes bite into a nice yummy salt lump. sick.gif

Hehe I assume she would have put the bacon salt in when she saute'd the onions etc.

It contains wheat AND dairy anyway original.gif

I vote for mushrooms too. Capers would also work but they would mostly just be salt and might overpower other flavours.

FWIW, a lot of vegetarians / vegans wouldn't want faux meats or with anything that tastes like meat in the dish - many don't like the flavour of meat and that's part of why they are vegetarian (speaking for myself, but also others I know!).

The bacon salt I bought was GF and DF.

Thought you'd never ask.

Butternut pumpkin, halved longways and put in ovensafe and microsafe dish with a splash of water. Cover with double layer of glad wrap and microwave till the centre of each half is soft.

Scoop out inside of pumpkin flesh and leave a centimetre or two of pumpkin around the edge. Saute onion, bacon and garlic, add to the pumpkin flesh and add some grated cheese and rosemary. Put back into the pumpkin shells and top with some more grated cheese.

Bake in the oven till it looks done. Enjoy.

Not necessarily looking for a bacon taste (although that's an option.) Just looking for ideas to replace the bacon, with something that goes well with rosemary and pumpkin original.gif

Definitely mushroom for the bulk and texture.

For the smokey depth of flavour, how about smoked salt?  I know Maldon do a version and I've seen some other brands too. It is just sea salt that has been smoked with wood chips so no GF or animal issues.
